Autumn Cake Recipe Collection | Baby #2 Update

Some things are better as surprises. Like biting into a slice of cake and being transported to another flavor universe. Like finding out you’re pregnant with your second baby and realizing just how happy you are about it. Yes, surprises, while not typically my forte, are sometimes welcome things.

Before we get to the juicy bits about baby #2, let’s talk about cake. Our joyfully energetic toddler Ronan celebrated his 2nd birthday last Friday so naturally, I set out to make him a birthday cake. I wanted a fall flavor yet something that didn’t seem too “adult”-ish. Caramel apple fit that flavor search. I decided to try this recipe by Sugar & Sparrow, and holy mackerel! Am I glad I did!

The cake itself I could have eaten without any frosting and been perfectly content. It was THAT good. Add the homemade caramel and caramel buttercream, and it’s like all that you love about fall comes together in one bite. This cake is rich, decadent and totally worth the time.

Autumn flavors seem to compliment cakes so well. Everyone I know has their grandma’s, best friend’s, sister’s, aunt’s favorite pumpkin bar or apple cake recipe. So I thought…what better way to celebrate the season than with a roundup of yummy autumn cake recipes? So here we are. A list of cakes I think sound rather fabulous for getting those tastebuds rejoicing that it’s fall.

Now onto baby #2! This is my first blog update about it, and can you believe I’ve already crossed the half-way mark? We are 21 weeks to be specific. I alluded to it at the beginning, but this baby was rather a happy accident. We both want a large family and always intended for a second, but we were going to wait til our first little guy was past 2. But here we are. And we’re thrilled!

The nausea lasted up until about a month ago. Phew. So glad to be feeling better! I was terribly nauseous with Ronan, and given that all things about this baby feel quite similar to the first, my gut is telling me boy. But it’s a surprise! And could just as likely be a little lady so only time will tell. My cravings have included lime popsicles and Tom Yum soup (a Thai soup if you’re not sure), and my aversions have oddly enough been bananas and bacon (bananas were a no-go with Ronan too).

We got to see the sweetest little hand wave at our ultrasound last Friday, and it’s making me realize that 4 months from now is really so short. Let the nesting commence! I have a room to paint and furniture to rearrange and decorating to do as Ronan is moving into another room. It’s about time I hop to it! But before then, just one more slice of cake… 🙂
