I can be found at the St. Charles Farmer’s Market most Saturdays during the season. I specialize primarily in artisan sourdough breads and from-scratch pastries. I also accept a small number of bespoke cake orders. Please see a sample of my work below (or visit my portfolio). Products are available for pickup or delivery within a 30-minute radius of my home. I request that orders be placed a week in advance but can often accommodate a quicker turnaround time if necessary.
ARTISAN BREAD
SOURDOUGH
Sourdough by definition is simply leaven for making bread. This leaven or yeast is cultivated naturally through fermenting dough and is often referred to as “wild yeast”. Both delicious (and better for your health), I prefer to bake utilizing sourdough starter versus commercial yeast as much as possible. See below for offerings.
- House Sourdough – A classic batard consisting of primarily bread flour and small percentage of whole wheat and rye. This is the rustic, hearty stuff you’ll find me ripping in half and promptly dipping in a bowl of my favorite soup.
- Cinnamon Raisin Sourdough – My specialty! A large loaf of white sourdough with layers of cinnamon, brown sugar and raisins rolled in. Toasted with butter makes this loaf especially scrumptious.
- Sandwich Sourdough – A traditional white loaf perfect for sandwiches and toast, but let’s be clear, it’s anything but boring. Delicious and tasty, this isn’t your commercial sandwich bread.
Rye, whole wheat and ancient grain (einkorn, spelt, etc…) loaves available on request. If you’re interested in baking your own sourdough, I can also provide you with starter.
BREAD SUBSCRIPTION
Love fresh bread every week? Try my bread subscription.
$30 Monthly Subscription – One loaf (your choice of any of the three listed above) baked especially for you each week to be picked up on Thursday/Friday.
$55 Monthly Subscription – Same as above with two loaves per week.
Drive-by pickup is directly in front of my home where I’ll bring your loaf out to your vehicle. Alternatively, if I am at the farmer’s market, you can elect to pick up your loaf there.
FROM-SCRATCH PASTRIES
- Hand-laminated Turnovers – These are the first to sell out when I bring them to the farmer’s market. Hand-laminated puff pastry (dough and butter rolled and turned multiple times to create layers) with from-scratch fillings highlighting seasonal fruit flavors.
- Pies + Tarts – From-scratch pie crusts and tart shells filled with whatever filling you choose – fresh fruit, tangy citrus, smooth chocolate and more, always with a signature decorative touch.
- Breakfast Pastries + Treats – From sticky buns to cinnamon rolls to danishes, I enjoy working with multiple kinds of dough. I love making classic, nostalgic treats while simultaneously experimenting with my own unique flavors.
DESSERT BAR
If you’re looking for something a little different for your next event, party or wedding, consider a dessert bar. This would include anywhere from 5-15 different treats of your choice to be displayed together at your next event. Just a few ideas? A pie table with 5-6 different flavors. A chocolate-themed table with items like brownies and chocolate chip cookies. Or maybe a donut bar featuring your favorites? This is a unique way to make your event/celebration highly memorable.
BESPOKE CAKES
From bespoke wedding cakes to custom birthday cakes, I’m happy to help create the cake you envision. When inquiring about a custom cake and estimate, please provide as much detail as you can, keeping the following in mind:
- What size? Typically determined by number of guests.
- How many tiers? And what shape (circle, square, etc…)?
- Do you have a flavor in mind?
- Buttercream or fondant?
- What type of decorations?
- When and where will it be delivered?
